Ingredients
- Fresh basil leaves - 14.8 oz
- Large eggs - 8 pieces
- Canned Baby Beets - 8.1 oz
- Carrot - 8.8 oz
- Chopped almonds - 2 tablespoons
- Honey-Mustard Dressing - to taste
Step by Step guide
Step 1
Boil the eggs in boiling water until hard. Place them in ice water for a while, drain, and peel. Separate 6 yolks (they won't be needed), finely chop the remaining whites and yolks.
Step 2
Prepare the blue cheese salad dressing (see note).
Step 3
In a bowl, mix the spinach leaves with 2 tablespoons of dressing and divide them onto 2 plates.
Step 4
Top with the chopped eggs, diced pickled beets, and julienned carrots. Sprinkle with nuts and drizzle with the blue cheese dressing.
