Ingredients
- Beets - 6 pieces
- Extra virgin olive oil - to taste
- Coarse Salt - to taste
- Tomatoes - 2 lbs
- Lemon - ½ piece
- Freshly ground black pepper - to taste
- Chopped Mint Leaves - 0.7 oz
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
Cut the beets in half lengthwise and place them cut side up on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt. Cover with foil and bake in the oven for about 35 minutes until tender. Let cool, peel, and cut into small wedges.
Step 3
Slice the tomatoes into wedges similar in size to the beets and arrange them on a plate with the beets. Drizzle with olive oil and lemon juice, season with salt and pepper. Sprinkle with mint and serve.
