Ingredients
- Sweet Peppers - 4 pieces
- Oyster Mushrooms - 10.6 oz
- Champignon Mushrooms - 10.6 oz
- Garlic - 3 cloves
- Breadcrumbs - 1.8 oz
- Grated Parmesan cheese - 2.8 oz
- Serbian Feta Cheese - 3.5 oz
- Vegetable Oil - to taste
- Butter - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the large peppers (I used two colors — red and yellow) in half and remove the seeds and ribs to create boats.
Step 2
Chop the mushrooms into small pieces and sauté them in a mixture of vegetable and butter until lightly golden (do not overcook!!)
Step 3
Mix the sautéed mushrooms with the minced garlic and fill the pepper boats with the mixture. Crumble pieces of feta cheese on top of the mushrooms.
Step 4
Combine the breadcrumbs (I used breadcrumbs from Cykoria S.A.) with the grated Parmesan cheese. Adjust the amount of breadcrumbs to your preference, but you will need approximately 50–70 grams.
Step 5
Line a baking tray with parchment paper and brush it with a small amount of vegetable oil. It’s best to use a silicone pastry brush. Place the peppers on the tray.
Step 6
Sprinkle the peppers with the breadcrumb and cheese mixture. Drizzle a thin stream of vegetable oil over the peppers.
Step 7
Bake in the oven until the peppers are soft (about 30-35 minutes).
