Ingredients
- Red Grape Juice - 16 fl oz
- Shallot - 2 pieces
- Dried Chinese mushrooms - 0.5 oz
- Beetroot - ½ piece
- Butter - 4.2 oz
- Salt - ¼ teaspoon
Step by Step guide
Step 1
In a saucepan, combine the wine, finely chopped shallots, mushrooms, and finely chopped beetroot. Place over medium heat, bring to a boil, reduce the heat, and simmer until the volume is reduced to 240 ml. Strain through a sieve and return to the saucepan.
Step 2
Bring to a boil again and simmer until the volume is reduced to 120 ml. Reduce to a very low heat and, using a fork, add the butter piece by piece, whisking gently. Season with salt.
