Black Bean Salad with Corn and Bell Pepper

Ingredients

  • Chopped Cilantro - 2 tablespoons
  • Frozen Corn - 2 cups
  • Red Bell Pepper - 1 piece
  • Black Beans - 14.8 oz
  • Lime Juice - 2 tablespoons
  • Mirin - 1 tablespoon
  • Olive Oil - 2 tablespoons
  • Ground Cumin - ¼ teaspoon
  • Salt - to taste

Step by Step guide

Step 1

Boil the corn or roast it in the oven.

Step 2

Remove the kernels from the cob.

Step 3

In a large bowl, mix lime juice, bell pepper, jicama, and black beans.

Step 4

In a small bowl, combine lime juice, mirin, olive oil, cilantro, cumin, and salt.

Step 5

Drizzle this mixture over the vegetables and toss.

Step 6

Chill for 30 minutes to let the salad marinate.

Step 7

Just before serving, garnish with a few cilantro leaves.
