Ingredients
- Pasta (corkscrew) - 7.1 oz
- Salmon - 10.6 oz
- 10% cream - 3 fl oz
- Dry White Wine - 3 fl oz
- Grated Pecorino Pepato Cheese - 1.8 oz
- Olive Oil - 3 tablespoons
- Salt - to taste
- Red Caviar - 3.5 oz
- White Pepper (whole) - to taste
- Shallot - 6 pieces
- Minced garlic - 1 clove
Step by Step guide
Step 1
Cook the pasta. Prepare for one minute less than indicated on the package.
Step 2
While the pasta is cooking, cut the salmon into small pieces and quickly sauté in olive oil.
Step 3
Heat a small saucepan or skillet with a thick bottom. Pour in the remaining olive oil, sauté the shallots and garlic, then add the wine. Let it evaporate. Next, add the cream. Warm the mixture and stir in the cheese with a spatula. Add salt and pepper. Add the fish and gently mix. It's important not to over-salt, as the saltiness will be balanced by the salty red caviar. The sauce should achieve a creamy texture.

Plate the pasta, drizzle with sauce, and add a couple of teaspoons of red caviar on top.
