Black Ravioli with Pumpkin
Ingredients
- Wheat Flour - 3½ cups
- Pumpkin - 2 lbs
- Ground Cinnamon - a pinch
- Ground Nutmeg - a pinch
- Ground clove - a pinch
- Goat cheese - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Squid Ink Pasta - 1 teaspoon
- Butter - 2.6 oz
- Chicken Egg - 1 piece
- Milk - 1 teaspoon
- Chopped Sage Leaves - ½ teaspoon
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Cut the pumpkin in half and clean it. Place it cut side down on a baking sheet and roast until the pumpkin is soft enough to easily insert a knife (about 45 minutes).
Step 3
Make the ravioli dough. Sift the flour with a pinch of salt, add the eggs one at a time, and knead the dough well, adding the squid ink. Knead the dough for 5–7 minutes, cover with plastic wrap, and refrigerate for 20–30 minutes or until needed.
Step 4
Once the pumpkin is ready, scoop out the flesh and place it in a blender along with the goat cheese and spices.
Step 5
Return the pumpkin puree to the baking sheet and place it in the oven for another 15–20 minutes to evaporate excess moisture.
Step 6
Cool the pumpkin and cheese mixture.
Step 7
Divide the dough into 2 parts and, using a pasta machine or rolling pin, roll the dough into thin sheets, about 1 mm thick. Place one sheet of dough on a floured surface and place ½ teaspoon of filling at 3 cm intervals so that the dough can be sealed at those points.
Step 8
In a small bowl, beat the egg with a little milk and brush all the areas of the dough that are free of filling to help the dough stick together.
Step 9
Cover with another sheet of dough and gently press the dough together, ensuring there are no air bubbles inside (if there are, you can use a ravioli mold, like our dumpling maker).
Step 10
Boil water, add salt, and carefully drop the ravioli into the boiling water. Cook for 5–6 minutes (al dente).
Step 11
For the sauce, melt the butter and add sage (or any other herb you like). Sauté briefly and add the cooked ravioli to the pan, toss and enjoy!
