Black spaghetti with salmon and mozzarella

Ingredients

  • Vegetable Oil - to taste
  • Fish Oil - 0 fl oz
  • Melted Cheese - 0.7 oz
  • Arugula - 0.2 oz
  • Onion - 0.2 oz
  • Smoked haddock fillet - 1.8 oz
  • Citrus Zest Mix - to taste
  • 33% Cream - 3 fl oz
  • Chopped Sage Leaves - 0.1 oz
  • Spaghetti - 3.5 oz

Step by Step guide

Step 1

Finely chop the onion (5 g) and cut the skinless salmon fillet (50 g) into strips, then sauté in vegetable oil for 20–30 seconds.

Step 2

Add the grated zest of 1/5 of an orange and sauté for another 15 seconds.

Step 3

Add fish broth (50 ml), 38% cream (100 ml), salt and pepper to taste, and finely chopped parsley (2 g).

Step 4

Stir the mixture until the sauce thickens.

Step 5

Mix the resulting sauce with the cooked black spaghetti (100 g) and plate it.

Step 6

Top with grated mozzarella cheese (20 g), add arugula (5 g), and place a halved ball of mozzarella on top.
