Description

Plums can also be yellow or red — the important thing is that they are sweet. The intensity of spiciness can be moderated by adjusting the amount of ginger and chili pepper. Optionally, dry wine can be added (preferably Italian table wine), white for yellow plums, red for red and blue.

Ingredients

  • Star anise - 2 pieces
  • Plums - 2 lbs
  • Ginger - 7.1 oz
  • Spanish onions - 17.6 oz
  • Mild Chili Spice - 3 pieces
  • Garlic - 1 head
  • Cilantro - 1 bunch
  • Ground Black Pepper - 1 tablespoon
  • Ocean salt - 1 tablespoon
  • Brown Sugar - 4 tablespoons
  • Cinnamon - 2 pieces

Step by Step guide

Step 1

Wash the blue plums (Hungarian variety), cut them in half, and remove the pits.

Step 2

Chop the ginger and onion into medium-sized pieces.

Step 3

Place the ginger and onion in a pot with medium sides, adding olive oil (you can add a tablespoon of sesame or nut oil to enhance the flavor).

Step 4

Sauté over medium heat until softened (5–12 minutes).

Step 5

Add finely chopped garlic and sliced chili pepper (previously seeded).

Step 6

Cook until the flavors meld (5–7 minutes).

Step 7

Add the plums, sugar, wine (if desired), star anise, and cinnamon.

Step 8

Stir constantly, preventing burning (30–40 minutes). The result should be a thick, homogeneous puree.

Step 9

If you want to feel the pieces of onion, garlic, plums, and chili, leave it as is. Otherwise, blend everything with a blender. Store in sterilized jars in the refrigerator.
