Boiled salmon with lemon, herb, and capers sauce

Ingredients

  • Carrot - 2 pieces
  • Leek - 1 piece
  • Lemon - 1 piece
  • Thyme - 4 sprigs
  • Parsley - 10 stems
  • Bay leaf - 1 piece
  • Green peppercorns - ½ teaspoon
  • Ground coriander - ½ teaspoon
  • Coarse Salt - 2 tablespoons
  • Dry White Wine - 8 fl oz
  • Smoked haddock fillet - 4 pieces
  • Sour Cream - 5 tablespoons
  • Meyer Lemon Juice - ¼ tablespoon
  • Citrus Zest Mix - ¼ tablespoon
  • Capers - 2 tablespoons
  • Chopped Sage Leaves - 1 tablespoon
  • Tarragon - 1 tablespoon

Step by Step guide

Step 1

For the sauce: mix all the ingredients. Store the sauce in the refrigerator until needed.

Step 2

For the salmon: combine the carrot, leek, lemon slices, thyme, parsley, bay leaf, peppercorns, coriander, salt, and wine in a large skillet.

Step 3

Add water to raise the liquid 4 cm from the bottom of the pot. Bring to a boil and reduce the heat. Place the salmon fillets in the skillet. Cover and cook until firm in the center, about 6-8 minutes.

Step 4

Transfer the fish to a plate and cover with something. Cool to room temperature and serve with the lemon, herb, and capers sauce, along with a watercress and cucumber salad.
