Ingredients
- Tripe - 2 lbs
- Carrot - 2 pieces
- Parsley - 2 pieces
- Garlic - 7 cloves
- Parsley - to taste
- Bay leaf - to taste
- Spices - to taste
- Ground Black Pepper - to taste
- Salt - to taste
- Ground Caraway - to taste
Step by Step guide
Step 1
Soak the prepared tripe in cold water for 2–3 hours (during this time, change the water three to four times).
Step 2
In a pot, bring salted water (3–4 liters) to a boil, add the tripe, cleaned, washed, and sliced carrots, parsley roots, garlic (2 cloves), bay leaf, caraway seeds, and allspice.
Step 3
Cook for 2–3 hours (until the tripe becomes tender).
Step 4
Sprinkle the cooked tripe with ground black pepper, the remaining cleaned and minced garlic, and chopped parsley.
Step 5
Roll the tripe into roulades, tie with string, place in the broth, and cook for another 30–40 minutes.
Step 6
Remove the finished tripe from the broth, remove the strings, and slice into rounds.
Step 7
Serve with boiled or fried potatoes and pickled cucumbers.
Step 8
Serve horseradish with vinegar separately.
