Bolognese Pasta in a Pressure Cooker

Ingredients

  • Grated Pecorino Pepato Cheese - to taste
  • Chicken Broth - 7 fl oz
  • Gelatin - 1.1 oz
  • Olive Oil - 2 tablespoons
  • Bacon - 7.9 oz
  • Onion - 1 head
  • Turnips - 2 pieces
  • Celery stalk - 2 stalks
  • Garlic - 4 cloves
  • Chopped Sage Leaves - 0.7 oz
  • Chopped Sage Leaves - 1.2 oz
  • Chicken Liver - 7.9 oz
  • Beef chuck roast - 31.7 oz
  • Boneless pork shoulder - 15.9 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Red Grape Juice - 15.9 oz
  • Baking Tomatoes - 14.1 oz
  • 10% cream - 12.3 oz
  • Bay leaf - to taste
  • Fish Oil - 2 tablespoons
  • Basil - 0.6 oz
  • Green Tagliatelle Pasta - 24.7 oz

Step by Step guide

Step 1

Mix the chicken broth with gelatin and set aside for a while.

Step 2

In a hot pan over medium heat, sauté the bacon until golden brown. Then add the onion, carrots, celery, sage, garlic, and half of the parsley, and continue to sauté for about 8 minutes, stirring constantly. It is important that the vegetables do not turn brown.

Step 3

Add the chicken liver and cook for 5 minutes, stirring constantly. Next, add pieces of beef, pork, salt, and pepper to taste, and continue to cook for 10 minutes, stirring with a wooden spoon. Then simmer for 25 minutes until excess moisture evaporates and the meat begins to brown.

Step 4

Add the broth, red wine, tomatoes, 250 g of cream, and bay leaf, cover with a lid, and cook under high pressure for 30 minutes. Afterward, reduce the pressure and continue to simmer uncovered for 30-45 minutes over medium heat until the sauce thickens.

Step 5

Mix the remaining cream, Parmesan, fish sauce, basil, and parsley, and bring to a boil while stirring constantly until the sauce reaches a creamy consistency. Add salt and pepper to taste.

Step 6

To serve: cook the pasta in salted water until al dente. Drain most of the water, leaving half a cup for the sauce. Transfer the pasta to a saucepan and add half of the sauce along with the remaining water. Gently mix the pasta and sauce over high heat for 30 seconds to ensure the pasta is evenly coated.

Step 7

Transfer to a serving dish and top with the remaining sauce. Serve with grated Parmesan.
