Description

Ingredients
- Vodka - 27 fl oz
- Borodinsky Bread - 12.3 oz
- Bread Kvass - 3 fl oz
Step by Step guide
Step 1
Dry the Borodinsky bread in a convection oven until it reaches a bone-dry hardness (dry it, do not toast it).
Step 2
Soak the Borodinsky croutons in vodka until they occupy 2/3 of the volume, and let them steep in a sous-vide at 131°F for 4 hours or for 2 days in a cool, dark place.
Step 3
Strain without pressing the pulp too hard to avoid sediment.
Step 4
Add the bread syrup made from kvass, reduced to a quarter of its original volume, and mix well.
Step 5
Chill before serving.
