Braised Beef Chertanov Style
Ingredients
- Beef - 17.6 oz
- Sweet Red Onion - 2 pieces
- Balsamic Vinegar - 6 tablespoons
- Soy Sauce - 4 tablespoons
- Olive Oil - 2 tablespoons
- Vegetable Oil - 3 tablespoons
- Coriander essential oil - a pinch
- Fresh Rose Hips - a pinch
- Basil - 8 stems
- Bay leaf - 2 pieces
- Toasted Cumin Seeds - a pinch
- Brown Sugar - 1 tablespoon
- Ocean salt - to taste
- Garlic - to taste
- Water - 1 cup
- Potato - 1 piece
- Clove - 2 pieces
Step by Step guide
Step 1
Rinse the beef and cut it into pieces, do not measure with a ruler.
Step 2
In a preheated cast-iron skillet (sauté pan, duck pan, whatever you prefer) with vegetable oil, place the meat and sauté until lightly browned.
Step 3
While the meat is frying, slice the onion into feathers.
Step 4
Preheat the oven to 392°F.
Step 5
Transfer the sautéed meat to a colander to leave the broth in the skillet, and immediately cover tightly or wrap in foil (the meat, not the skillet). Place the meat in the oven.
Step 6
In the skillet with the broth, pour in the olive oil, add the onion, and sauté until translucent for about 5 minutes.
Step 7
Then pour in the soy sauce, balsamic vinegar, add the tomato cut into wedges, cumin, rosemary, coriander, bay leaf, clove (oregano and peppercorns can also be added), mix, add a cup of boiled water and brown sugar.
Step 8
Bring to a boil, remove from heat, add the basil stems and a few leaves, and if desired, garlic (you can add it whole, without chopping), salt to taste.
Step 9
Add the broth to the meat that is baking and braise at 302°F for 40 minutes.
