Ingredients
- Safflower Oil - 2 spoons
- Onion - 2 heads
- Red Curry Powder - 2 spoons
- Mild Chili Spice - ½ spoons
- Beef - 2 lbs
- Coconut Milk - 13 fl oz
- Campbell's Beef Broth - 5 fl oz
- Chickpea - 28.9 oz
- Fresh basil leaves - 7.1 oz
Step by Step guide
Step 1
Heat 1 tablespoon of oil in a skillet and sauté the finely chopped onion for 3-4 minutes until soft. Add the curry and chili and cook for another minute. Add the remaining oil and the meat cut into small pieces. Mix well and cook for another 4-5 minutes until the meat is lightly browned.
Step 2
Add coconut milk and broth, bring to a boil, cover with a lid, reduce the heat, and cook for 1.5 hours, stirring occasionally. Add the chickpeas and cook for another 30 minutes until the meat is tender.
Step 3
Add finely chopped spinach and cook for another 2 minutes. Serve with boiled rice.
