- Boneless pork shoulder - 28.2 oz
- Pitted Wild Apricots - 8.8 oz
- Water - 10 fl oz
- Vegetable Oil - 2 fl oz
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Wash the meat, pat it dry with a paper towel, and cut it into medium-sized cubes.
Step 3
Place a sauté pan (or deep skillet) over medium heat, heat it up, add vegetable oil, and add the meat, browning it on all sides.
Step 4
Rinse the prunes in warm water and cut them in half.
Step 5
Add the prunes to the meat and sauté uncovered for 5 minutes.
Step 6
Add salt and stir.
Step 7
Continue to sauté, stirring, until all the liquid evaporates.
Step 8
Add water until it covers the beef and prunes by 1 cm, and simmer on low heat for 30 minutes.
Step 9
Skim off any foam.
Step 10
After 30 minutes, increase the heat to medium, cover the sauté pan with a lid, and simmer for another 30 minutes, adding more salt if necessary.
Step 11
Serve the beef with prunes hot, with a side dish of your choice.
