- White Cabbage - 8.8 oz
- Onion - 5.3 oz
- Carrot - 3.5 oz
- Dry White Wine - 17 fl oz
- Ground Black Pepper - 0.1 oz
- Bay leaf - 0.1 oz
- Salt - to taste
- Pork fat - 3.5 oz
- Black Cumin (Cumin) - 0.1 oz
- Sugar - 1.1 oz
- Butter - 2.8 oz
Step by Step guide
Step 1
Cut all the vegetables and bacon into thin strips.
Step 2
Heat the cast-iron pot, melt some butter in it, and fry the bacon until crispy.
Step 3
Add the vegetables to the lard: start with the onions, lightly salting them, then add the carrots and cabbage. Add the bell pepper and, if needed, salt again.
Step 4
When the cabbage becomes translucent, add the wine, cover the pot with a lid, and place it in the oven preheated to 356°F until the wine evaporates. Then reduce the heat to 266°F and simmer for a couple of hours.
Step 5
Then add the cumin and sugar. Stir, cover again, and let it simmer for another 20 minutes.
