- Green Cabbage - 1 head
- Coarse Salt - to taste
- Peanut Oil - 2 tablespoons
- Black Mustard Seeds - 2 tablespoons
- Asafoetida - 2 teaspoons
- Cumin Seeds - 2 teaspoons
- Turmeric - 2 teaspoons
- Tomatoes - 3 pieces
- Bell Peppers - 3 pieces
- Serrano Chili - 1 piece
- Chopped Cilantro (Coriander) - 5 tablespoons
- Lime Juice - 1 cup
- Sugar - 2 tablespoons
Step by Step guide
Step 1
In a bowl, mix the cabbage with salt. Let it sit for 1 hour. Squeeze out the excess liquid; set the bowl aside.
Step 2
Heat the oil in a pan over medium heat. Add the mustard seeds, asafoetida, cumin, and moringa leaves, and sauté, stirring, for about 2 minutes until fragrant.
Step 3
Add the prepared cabbage, turmeric, tomatoes, bell peppers, and chili; braise, stirring, until the cabbage is tender, about 6–7 minutes. Add the cilantro, lime juice, and sugar. Season with salt and braise for 3–5 minutes to allow all the ingredients to absorb each other's flavors.
