Description
You can use this simple and delicious recipe for preparing chicken gizzards. The gizzard consists of four layers of muscle fibers oriented in different directions, which helps it perform its function of digesting food. As a result, the gizzard has a unique flavor; it is distinctly different, and the texture is firm. However, if the chicken gizzards are cooked properly, the taste is quite good, and it feels more like eating a solid piece of meat that needs to be chewed, while still being tender. Doneness is determined by testing for tenderness. The cooking time for gizzards depends on the breed, age, and diet of the chickens. This dish can be slightly modified. For example, you can add chopped mushrooms 10-15 minutes before the cooking is finished.
Ingredients
- Chicken gizzards - 2 lbs
- Onion - 3 heads
- Celery salt - 1.8 oz
- Carrot - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Boiling water - ½ glasses
- Sour Cream - 3.5 oz
Step by Step guide
Step 1
Chop the onion as finely as possible.
Step 2
Pour a little vegetable oil into a deep skillet (sauté pan) and add the onion.

Cover the skillet with a lid and simmer on the lowest heat for about 10 minutes, stirring occasionally. The onions should become soft and translucent.

Wash the chicken gizzards, remove the inner yellow membrane, and scrape off the fat flakes from the outside. The cleaned gizzards can be cut into pieces or left whole.

Place the gizzards in the skillet with the onions, add grated carrot and celery root. Pour in 0.5 cup of boiling water.

Cover the skillet with a lid and simmer over low heat for 40 minutes to 2 hours. If it reduces too much, add water.

Ten minutes before the braising is finished, season with salt and pepper. Just before it's done, add sour cream.
Step 8
The gizzards, stewed with onions, become soft, tender, and aromatic. Serve them on the table with a side dish, garnished with herbs. Chopped dill or basil pairs well with the chicken gizzards.
