- Poultry - 1⅖ kg
- Spanish onions - 25.4 oz
- Ground Black Pepper - 6 pieces
- Cinnamon - 1 piece
- Ground Cumin - 1 tablespoon
- Paprika - 1 tablespoon
- Ground Nutmeg - ½ spoons
- Ground clove - ½ spoons
- Cayenne Pepper - a pinch
- Water - 1 glass
- Red Wine Vinegar - 2 spoons
- Crushed Tomatoes in Their Own Juice - 28.2 oz
- Sugar - a pinch
- Passata Tomato Sauce - 2 spoons
- Spaghetti - 12 oz
- Grated Pecorino Pepato Cheese - to taste
Step by Step guide
Step 1
Heat oil in a deep skillet over medium heat. Cut the chicken into 8 pieces and fry in batches until golden brown, about 8 minutes each. Transfer to a plate.
Step 2
Add finely chopped onion to the skillet and sauté until soft, about 5 minutes. Then, add all the spices and cook for another minute until a fragrant aroma develops.
Step 3
Add the tomatoes with their juice and water. Place the chicken in the pot. Bring to a boil, then reduce the heat, cover with a lid, and simmer until the chicken is tender, about 35 minutes. Transfer the chicken to a plate and wrap it in foil.

Add vinegar, tomato paste, and sugar to the skillet. Cook until the sauce thickens, about 10 minutes. Season with salt and pepper, and add more vinegar to taste if desired. Remove from heat, cover, and keep warm.
Step 5
Cook the spaghetti in a pot of boiling salted water until tender. Drain the water and transfer the pasta to a plate. Top with chicken, drizzle with sauce, and sprinkle with cheese.
