Ingredients
- Wheat Flour - 1 tablespoon
- Poultry - 3 lbs
- Shallot - 24.7 oz
- Dates - 7.1 oz
- Chicken Broth - 22 fl oz
- Olive Oil - 1 tablespoon
- Meyer Lemon Juice - 5 teaspoons
- Cinnamon - 1 piece
- Ground Cumin - 1 tablespoon
- Grated Ginger Root - 1½ spoons
- Turmeric - ½ spoons
- Cayenne Pepper - 0,1 teaspoons
- Almond - 1.8 oz
- Cilantro - 0.7 oz
- Salt - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Sprinkle the chicken fillets, thighs, and drumsticks with salt, black pepper, and flour. Heat oil in a heavy pot over medium heat and brown the chicken for fifteen minutes. There is a lot of meat, so it's easier to cook it in batches, but the result should be the same: a golden crust on all sides. Transfer the cooked chicken to a separate dish.
Step 2
Reduce the heat under the pot and sauté the shallots for six minutes until golden brown. Add cinnamon, ginger, cumin, turmeric, and cayenne pepper, and cook, stirring, for another minute until the spices release their vibrant aroma.
Step 3
Pour the onions and spices with broth and three tablespoons of lemon juice, increase the heat and bring the contents of the pot to a boil, then cover with a lid and simmer on low heat for about fifteen minutes, until the onions are softened.
Step 4
Place the pieces of chicken on top of the onions and increase the heat. Once the broth in the pot comes to a boil, cover it with a lid. Simmer for twenty-five minutes. To check if the meat is done, pierce the chicken leg at its thickest part—the juices should run clear. Transfer the chicken and onions to a serving dish and cover with foil.
Step 5
Bring the remaining juice in the pot to a boil and simmer until it thickens slightly. Add the dates and two tablespoons of lemon juice, and cook on low heat for a couple more minutes until the dates are warmed through.
Step 6
Drizzle the chicken with the sauce made from dates, and sprinkle with pieces of toasted almonds and cilantro.
