Ingredients
- Lamb Neck Fillet - 3 lbs
- Onion - 2 heads
- Vegetable Oil - 3 tablespoons
- Fresh Mushrooms - 8.8 oz
- Garlic - 4 cloves
- Chicken Broth - 20 fl oz
- Fresh Rose Hips - 1 tablespoon
- Pitted olives - 30 pieces
- Citrus Zest Mix - 1 piece
- Passata Tomato Sauce - 4 tablespoons
Step by Step guide
Step 1
Preheat the oven to 320°F. Heat a large skillet and add vegetable oil. Shape the meat into a roll, tie with string if necessary, and sear on all sides for 2 minutes until golden brown. Transfer to a greased baking dish.
Step 2
In the same skillet, sauté the finely chopped onion for 8 minutes until soft, then add the sliced mushrooms and cook for another 3 minutes. Add the broth, minced garlic, rosemary, olives, zest, and tomato paste. Season with salt and pepper, bring to a boil, and pour over the meat.
Step 3
Cover with a lid and bake for 2.5 to 3 hours until the meat is very tender. Reduce the heat slightly if necessary.
Step 4
Slice into pieces and serve drizzled with the resulting sauce, alongside a green salad.
