Braised Pork Cheeks with Caramelized Leeks
Ingredients
- Wheat Flour - 2 tablespoons
- Beef Cheeks - 12 pieces
- Olive Oil - 4 tablespoons
- Onion - 2 heads
- Leek - 2 stalks
- Butter - 1 piece
- Thyme - 5 sprigs
- Bay leaf - 1 piece
- Honey - 1 tablespoon
- Dry White Wine - 7 fl oz
- Chicken Broth - 7 fl oz
- Dijon Mustard - 1 tablespoon
- 33% Cream - 3 fl oz
Step by Step guide
Step 1
In a bowl, mix the flour, salt, and black pepper. Dredge the pork cheeks in the mixture.
Step 2
Heat half of the olive oil in a large pot with a lid. Add the cheeks and brown them over medium heat for 2-3 minutes. Transfer to a plate.
Step 3
In the pot, add a small piece of butter, finely chopped onion, and leek. Cook for 20 minutes until the vegetables are soft. Add the herbs and honey and cook over medium heat until the vegetables caramelize.
Step 4
Return the meat to the pot, pour in the wine and broth, bring to a boil, cover with a lid, reduce the heat, and cook for 2.5 hours until tender.
Step 5
Transfer the cheeks to a plate and cover with foil.
Step 6
Bring the sauce to a boil and add the mustard and cream. Cook for 5-10 minutes until the sauce thickens and is smooth. Return the cheeks to the pot, stir, and serve.
