Ingredients
- Chicken Broth - 8 fl oz
- Pork intestines - 17.6 oz
- Vegetable Oil - 1 fl oz
- Meyer Lemon Juice - to taste
- Onion - 2 pieces
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Thoroughly rinse the kidneys, make a lengthwise cut, and soak for about an hour in water mixed with lemon juice.
Step 2
Pour boiling water over them, let simmer for a few minutes, then drain the water and let the kidneys cool.
Step 3
Slice the cooled kidneys diagonally into thin pieces and fry them in hot oil. Transfer to a pot, add the broth, the sliced and sautéed onion, salt, and pepper.
Step 4
Braised for about 30 minutes until tender.
