Braised Pork with Red Peppers (Hong Shao Rou)
Ingredients
- Star anise - 2 pieces
- Pork Blood - 17.6 oz
- Coarse Salt - to taste
- Vegetable Oil - 1 tablespoon
- Red Long Chili Peppers - 2 pieces
- Grated Ginger Root - 1 piece
- Leek - 1 piece
- Sugar - 1½ teaspoons
- Soy Sauce - 1 teaspoon
- Bay leaf - 2 pieces
- Herbed Tofu - 0.5 oz
Step by Step guide
Step 1
In a wok, bring 6 cups of salted water to a boil, add diced pork, and cook for 5 minutes. Drain and transfer to a plate.
Step 2
Dry the wok and heat it over high heat until smoking. Pour in the oil and spread it across the surface. Add finely chopped chilies, ginger, and leek, and stir-fry for 30 seconds. Add the pork and stir-fry, stirring constantly, for 3 minutes.
Step 3
Add sugar, soy sauce, tofu, and 2 tablespoons of liquid from the tofu. Cook until all ingredients are browned, about 6 minutes.
Step 4
Pour in 2.5 cups of water and add bay leaves and star anise. Bring to a boil, reduce the heat, cover, and simmer for 40-50 minutes until the meat is tender.
Step 5
Remove the lid and turn up the heat. Cook for 15 minutes until the liquid reduces to 2 tablespoons.
