Ingredients
- Potato - 2 lbs
- Onion - 1 head
- Carrot - 1 piece
- Orange Bell Peppers - 1 piece
- Canned Tomatoes (Pelati) - 3.5 oz
- Vegetable Oil - 1 fl oz
- Garlic - 2 cloves
- Ground Cumin - ½ spoons
- Ground coriander - ½ spoons
- Paprika - ½ spoons
- Sugar - ½ spoons
- Herbs - to taste
- Bay leaf - 1 piece
- Allspice berries - 3 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Water - 3 fl oz
Step by Step guide
Step 1
Dice the onion finely.
Step 2
Peel the potatoes and cut them into large pieces if they are big, or leave them whole if they are small.
Step 3
Peel the carrot and slice it into thick half-moons.
Step 4
Remove the seeds and white membranes from the pepper, then chop it into cubes about one centimeter in size.
Step 5
In a heavy-bottomed pot, heat vegetable oil. Sauté the chopped onion until golden brown.
Step 6
Add sugar, cumin, coriander, and paprika to the onions, stir well, then add the crushed garlic, tomatoes, and bell peppers. Sauté for 2–3 minutes, stirring occasionally.
Step 7
Add the carrot to the pot and sauté for 3 minutes.
Step 8
Add the potatoes, pour in water, cover with a lid, and simmer on low heat for 20 minutes.
Step 9
Season with salt and pepper to taste, add a bay leaf and allspice, cover with a lid, and simmer for another 20 minutes over low heat until the potatoes are cooked through.
Step 10
Sprinkle the cooked potatoes with chopped herbs.
