In this recipe, sweet bell pepper, paprika, and cumin serve as accessible enhancements. In the finished dish, they don't overpower the flavors but instead enrich the taste of the humble potato stew, making it deep and satisfying.

  • Potato - 2 lbs
  • Onion - 1 head
  • Carrot - 1 piece
  • Orange Bell Peppers - 1 piece
  • Canned Tomatoes (Pelati) - 3.5 oz
  • Vegetable Oil - 1 fl oz
  • Garlic - 2 cloves
  • Ground Cumin - ½ spoons
  • Ground coriander - ½ spoons
  • Paprika - ½ spoons
  • Sugar - ½ spoons
  • Herbs - to taste
  • Bay leaf - 1 piece
  • Allspice berries - 3 pieces
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Water - 3 fl oz

Dice the onion finely.

Peel the potatoes and cut them into large pieces if they are big, or leave them whole if they are small.

Peel the carrot and slice it into thick half-moons.

Remove the seeds and white membranes from the pepper, then chop it into cubes about one centimeter in size.

In a heavy-bottomed pot, heat vegetable oil. Sauté the chopped onion until golden brown.
