Shrimp sauce chicken, or chicken in sauce. A Brazilian contribution to the 'Golden Thousand.' The charm of the dish lies in its unusual sauce made from dried shrimp, ginger, and nuts.
Ingredients
- Lime - 2 pieces
- Poultry - 2 pieces
- Onion - 3 pieces
- Garlic - 2 cloves
- Cashew - 2.6 oz
- Peanut Sprouts - 2.6 oz
- Dried Squid - 2.6 oz
- Cilantro - 1.8 oz
- Ginger - 1.4 oz
- Mild Chili Spice - 2 pieces
- Canned Tomatoes (Pelati) - 14.1 oz
- Peeled Cooked Shrimp - 17.6 oz
- Coconut Milk - 8 fl oz
- Ground Black Pepper - to taste
- Salt - to taste
- Vegetable Oil - 1 fl oz
Step by Step guide
Step 1
Cut the chicken into pieces.
Step 2
Marinate in lime juice, season with salt and pepper, and let sit for 30 minutes.
Step 3
Finely chop the garlic, onion, chili, and ginger.
Step 4
In a blender, combine the onion, cashews, peanuts, garlic, cilantro, ginger, chili, dried shrimp, and a cup of water.
Step 5
In a heavy-bottomed pot, heat vegetable oil and sauté the chicken pieces in batches until golden brown. Add more oil as needed.
Step 6
Return the whole chicken to the pot and add the sauce from the blender.
Step 7
Add the tomatoes.
Step 8
Add coconut milk and bring to a boil. Cook for 30 minutes over low heat, covered. Stir occasionally.
Step 9
Add the shrimp 5 minutes before cooking is finished.
Step 10
Serve with boiled rice.
