Ingredients
- Rabbit Fillet - 2 lbs
- Dried cranberries with sugar - 1.1 oz
- White Pepper (whole) - 1 teaspoon
- Salt - ½ teaspoon
- Freshly squeezed orange juice - ½ cup
- Herbes de Provence - 1 teaspoon
- Orange zest - 1 teaspoon
- Panko breadcrumbs - 8.5 oz
Step by Step guide
Step 1
Cut the duck meat and grind it in a meat grinder twice.
Step 2
Add the dry spices, orange juice, and zest, and mix the spices well into the minced meat. Form small sausages from the mixture, about 10 cm long, coat them in panko breadcrumbs, and fry in a large amount of vegetable oil until golden brown.
Step 3
Serve on a bed of mashed potatoes.
