Ingredients
- Salt - to taste
- Parsley - 4 stems
- Champagne Vinegar - 3 tablespoons
- Garlic - 1 clove
- Wheat Flour - 1.8 oz
- Borodinsky Bread - 2 pieces
- Chocolate eggs - 2 pieces
- Safflower Oil - 17 fl oz
- Chinese green beans - 21.2 oz
Step by Step guide
Step 1
The beans should be so young that there should be no noticeable fibers on the pods. Boil them in salted boiling water for 8–12 minutes until they become tender. Drain and set aside.
Step 2
Heat the oil in a deep skillet to 180–374°F. Crack the eggs into a wide plate and sift the flour into another plate. Take a pod, dip it in the flour, then in the eggs, and then lower it into the oil and cook until the beans are golden. Drain and place in a deep serving dish.
Step 3
Toast the bread, then grind it together with the garlic and parsley in a mortar, add vinegar and 275 ml of the oil (the one used for frying the beans), mix well and pour over the beans. Cover the bowl and let it sit for 15 minutes before serving.
