Breaded perch is a delicious dish that features tender fish fillets coated in a crispy breading.   • Sea Bass - 1 piece
  • Butter - 0.9 oz
  • Tarragon - 0.2 oz
  • Dill - 0.2 oz
  • Chervil - 0.2 oz
  • Wheat Flour - to taste
  • Chicken Egg - 1 piece
  • Breadcrumbs - to taste
  • Lemon - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Fennel - to taste

First, prepare the perch: scale the fish, gut it, remove the gills, and trim the fins.

Carefully separate the fillet along the backbone, avoiding cutting through the skin. Use scissors to cut out and remove the backbone. Rinse under cold water.

Then mix the softened butter with finely chopped herbs (tarragon, dill, chervil).
