Breaded Rainbow Trout

Ingredients

  • Olive Oil - 3 fl oz
  • Trout - 28.2 oz
  • Breadcrumbs - 0.2 oz
  • Garlic - 0 oz
  • Chopped Sage Leaves - 2 tablespoons
  • Dried Rosemary - 1 teaspoon
  • Marinated cherries - 6 pieces
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Basil - ½ bunch
  • Citrus Zest Mix - 2 tablespoons
  • Medium-dry sherry - 2 fl oz

Step by Step guide

Step 1

Clean the fish and cut it into fillets. Rinse the lemon, dry it, and grate the yellow part of the peel. Mix with the breadcrumbs.

Step 2

Chop the garlic, parsley, and rosemary, and combine with the breadcrumbs, adding salt and pepper.

Step 3

Wash the potatoes, cut large potatoes into wedges, season with salt and pepper, drizzle with a little olive oil, and bake in the oven for 10 minutes before the fish at a temperature of 392°F.

Step 4

Meanwhile, take the fish fillets and carefully coat both sides with the breadcrumb mixture. Apply it in such a way that the breadcrumbs adhere well to the flesh.

Step 5

Place the fillets next to the potatoes, flesh side up, and evenly drizzle with olive oil. Season with salt and pepper, sprinkle the remaining breadcrumbs over the potatoes, and bake for another 20 minutes at the same temperature until a golden crust forms. During baking, about 5–7 minutes before it’s done, add a little white wine.

Step 6

When serving, garnish with cherry tomatoes and basil.
