Ingredients

  • Butter - 1.8 oz
  • Onion - 1.8 oz
  • Vegetable Oil - 1 fl oz
  • Veal Tenderloin - 21.2 oz
  • Parsley - to taste
  • Ground Black Pepper - to taste
  • Salt - to taste

Step by Step guide

Step 1

Lightly pound the meat, season it with salt and pepper, drizzle with vegetable oil, and let it rest on a plate for half an hour. Place it in a skillet or roasting pan with hot melted butter and sear on both sides until a crispy crust forms, making sure the inside of the ribeye remains slightly rare.

Step 2

Mix the butter with the onion, parsley, and a pinch of pepper. Spread the resulting green butter over the bottom of a deep dish, place the ribeye steak on top, cover with a plate, and place the dish in a water bath for 5–7 minutes.
