Ingredients
- Broccoli - 1 head
- French fries - 7.1 oz
- Olive Oil - 3 tablespoons
- Macadamia Nuts - 10 pieces
- Chopped almonds - 10 pieces
- Ocean salt - to taste
Step by Step guide
Step 1
Fill a large bowl halfway with cold water and add a few handfuls of ice cubes. Set aside.
Step 2
Break the broccoli into small pieces and add them to a pot of boiling salted water, bringing it back to a boil and letting it cook for 1 minute. Drain the water and transfer the broccoli to the ice water. Repeat the same process with the beans, trimming the ends of the pods but not opening them, then dry the broccoli and beans by placing them on a dry cloth.
Step 3
Pour the olive oil into a wok or large frying pan and heat over high heat. When the oil begins to smoke slightly, add the cashews and stir until they darken. Add the broccoli and sauté for 2 minutes, then add the beans. Sauté for another 2 minutes. Remove from heat and add the almonds, peeled and sliced lengthwise.
Step 4
Sprinkle with sea salt, drizzle with olive oil, and serve.
