Ingredients
- Broccoli - 17.6 oz
- Onion - 1 piece
- Potatoes - 3 pieces
- Olive Oil - 1 tablespoon
- 35% Cream - 3 fl oz
- Chicken Broth - 1 qt
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel and dice the onion and potatoes, then add them to a pot with heated olive oil. Sauté over high heat for 1 minute, stirring constantly.
Step 2
Add the diced broccoli and pour in hot broth (or just boiling water if you don't have broth). Cook for 20 minutes over medium heat. Blend with an immersion blender. Add the cream, salt, and pepper - bring to a boil.
Step 3
The soup is ready. Serve with croutons, finely chopped fresh herbs, or pieces of smoked chicken or bacon.
