Ingredients
- Broccoli - 17.6 oz
- Carrot - 8.8 oz
- Garlic - 2 cloves
- Chinese green beans - 7.1 oz
- Olive Oil - 2 tablespoons
- Meyer Lemon Juice - 0 fl oz
- Parsley - 1 bunch
- Salt - to taste
Step by Step guide
Step 1
Bring 2 pots of water to a boil: one for the broccoli, the other for the carrots and beans. Wash all the vegetables and herbs. Break the broccoli into florets.
Step 2
Add the beans and carrots to the boiling water. Cook for about 10 minutes, until tender.
Step 3
At the same time, cook the broccoli by adding it to the boiling salted water and cooking for about 7–10 minutes, until tender.
Step 4
Transfer the cooked carrots to a plate, drain the beans and broccoli in a colander, and rinse with cold water. This will help the vegetables retain their beautiful green color. Trim the ends off the beans and cut them into 3–4 pieces.
Step 5
Heat the oil in a skillet. Squeeze the garlic into the oil and reduce the heat to low.
Step 6
Immediately add the vegetables to the skillet and gently stir. Sauté for 2–3 minutes.
Step 7
While the vegetables are in the skillet, chop the parsley, preferably very finely.
Step 8
Transfer the vegetables to a deep plate, season with salt, add the parsley and lemon juice.
Step 9
Gently mix everything together.
