Brown Rice with Brussels Sprouts

Ingredients

  • Salt - to taste
  • Brown Rice - 1¼ cups
  • Water - 2½ cups
  • Brussels Sprouts - 14.1 oz
  • Lemon Zest - ½ teaspoon
  • Lemon Juice - 1 tablespoon
  • Minced garlic - 1 clove
  • Chopped roasted hazelnuts - ½ cup
  • Grated Parmesan cheese - 2.1 oz
  • Chopped Parsley - ½ cup
  • Olive Oil - ½ cup
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Rinse the rice with water, bring to a boil, and simmer on low heat until tender, about 35 minutes. All the liquid should be absorbed during this time.

Step 2

While the rice is cooking, separate the Brussels sprouts into small florets and mix them in a separate bowl with salt, lemon zest, and lemon juice.

Step 3

Then add the mixture to the cooked rice, stir in the remaining ingredients until evenly distributed, season with salt and pepper to taste, and serve.
