Brown Rice with Yogurt
Ingredients
- Lentils - 0 oz
- Jasmine Rice - 1 cup
- Butter - 1 tablespoon
- Olive Oil - 1 tablespoon
- Salt - 1 tablespoon
- Onion - 1 piece
- Cinnamon - ½ teaspoon
- Natural Yogurt - ½ cup
- Ground Cumin - ½ teaspoon
- Ground coriander - ½ teaspoon
- Paprika - ½ teaspoon
- Fresh Mint - 3 tablespoons
- Lemon - ½ piece
Step by Step guide
Step 1
Preheat the oven to 300–400 degrees Fahrenheit.
Step 2
Combine lentils, 0.5 tablespoons of salt, and 4 cups of water in a large pot and bring to a boil. Reduce the heat and continue to cook the lentils until tender, but do not overcook. Drain the lentils and set aside.
Step 3
Add rice, 0.5 tablespoons of salt, and 1.5 cups of water to the pot, place on medium heat, and bring to a boil. Once the water boils, cover with a lid and cook for about 15 minutes. Drain the water and remove the rice.
Step 4
Place a deep pot on medium heat and add butter and olive oil. When the oil is heated, add the chopped onion. After 5 minutes, add water if it has evaporated. Keep the onion on the heat as long as possible, constantly adding water to cook it properly.
Step 5
Mix the onion, lentils, and rice together and set aside.
Step 6
Combine yogurt, cinnamon, cumin, paprika, mint, lemon juice and zest, and coriander.
