- Soba Noodles - 10.6 oz
- Rice Vinegar for Sushi - 2 fl oz
- Sugar - 0.2 oz
- Salt - ¾ spoons
- Vegetable Oil - 1 tablespoon
- Fresh Mint - 3.5 oz
- Leek - 5 pieces
Step by Step guide
Step 1
Bring a large pot of water to a boil. Add the buckwheat noodles and cook for about five minutes, until they become soft. Then, transfer the noodles to a colander and rinse with cold water to stop the cooking process. Leave them in the colander for a couple more minutes to drain excess water.
Step 2
In the meantime, mix the vinegar, oil, sugar, and salt until the sugar is completely dissolved.
Step 3
Chop the mint leaves. Trim the dark green parts of the leek and slice the rest into thin rings.
Step 4
Combine the cooked noodles with the sauce, sprinkle with mint and leeks, and toss gently to mix.
