Ingredients
- Rice Noodles - 5.3 oz
- King Prawns - 12 pieces
- Red Grape Juice - 3.5 oz
- Olive Oil - 7 fl oz
- Parsley - 1 bunch
- Whole egg - 2 pieces
- Lime - ½ pieces
- Dijon Mustard - 1 tablespoon
- Garlic - 2 cloves
- Salt - 1 tablespoon
- Ground Black Pepper - a pinch
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Finely chop the parsley leaves and garlic for the aioli sauce.
Step 3
Using a mixer, beat the egg yolks with lime juice, mustard, salt, and pepper.
Step 4
While continuing to whisk, gradually pour in the olive oil (150 ml) in a thin stream.
Step 5
Once the mixture is smooth, add the parsley and garlic, and continue to whisk until well combined.
Step 6
Transfer the sauce to a container, cover it with plastic wrap, and refrigerate.
Step 7
In a large pot, bring water to a boil with salt at a ratio of 1 tablespoon of salt per 1 liter of water.

Add the noodles to the pot and boil until cooked, about 1 minute.

Drain the noodles in a colander and quickly rinse them under cold running water. Return the noodles to the pot and toss with 1 tablespoon of olive oil.

Peel the shrimp, heat the remaining oil in a skillet, and quickly sauté the shrimp for 30 seconds on each side.

Cut the grapes in half.

Arrange the noodles on plates, place the shrimp on top, drizzle with green aioli sauce, add the grapes on top, and serve.
