Ingredients
- Buckwheat Groats - 5.3 oz
- Potato - 1 piece
- Onion - ½ head
- Grated Pecorino Pepato Cheese - 1.1 oz
- Wheat Flour - 3.5 oz
- Sour Cream - 1.8 oz
- Garlic - 1 clove
- Chopped Sage Leaves - 0.7 oz
- Pickled garlic - 0.2 oz
- Mayonnaise - 0.7 oz
- Pickles - 2 pieces
Step by Step guide
Step 1
Rinse the buckwheat groats and cook them with salt over low heat until they are almost fully cooked.
Step 2
Grate the potato on a fine grater and squeeze out the juice through a colander. Finely chop the onion. Allow the buckwheat to cool slightly, then mix it with the potato, onion, and grated Parmesan. Form the mixture into a patty mixture, season with salt and pepper.
Step 3
Shape the mixture into patties, coat them in flour, and fry for 7–10 minutes on each side.
Step 4
For the sauce, mix sour cream, finely grated pickles, minced garlic, herbs, ginger, and mayonnaise. Season with salt and pepper. Serve immediately after cooking.
