- Buckwheat Groats - 2 cups
- Veal - 14.1 oz
- Carrot - 1 piece
- Onion - 1 head
- Vegetable Oil - 1 fl oz
- Butter - 1.8 oz
- Celery salt - 1.8 oz
- Dill - 1.8 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Sort the buckwheat, rinse it, pour in 3.5 cups of boiling water, and cook on low heat until the grains absorb the water.
Step 2
Then transfer the porridge to a clay pot and place it in a preheated oven for 15–20 minutes.
Step 3
Rinse the veal and cut it into small pieces.
Step 4
Peel, wash, and grate the carrot on a coarse grater.
Step 5
Peel, wash, and slice the onion into thin half-rings.
Step 6
Sauté the meat lightly in heated vegetable oil, add the onion and carrot, season with salt and pepper, and fry until cooked through.
Step 7
Wash and finely chop the celery greens and dill.
Step 8
Season the cooked porridge with salt, stir in the butter, and mix with the fried meat and vegetables.
Step 9
Before serving, sprinkle each portion with chopped greens.
