Ingredients

  • Lamb - 14.1 oz
  • Buckwheat Groats - 14.1 oz
  • Turnips - 3 pieces
  • Clarified Butter - 2.5 oz
  • Lamb Fat Netting - 1.1 oz
  • Onion - 3 heads
  • Chicken Egg - 1 piece
  • Parsley - to taste
  • Cilantro - to taste
  • Daikon - 1 piece
  • Vegetable Oil - 2 tablespoons
  • 9% Vinegar - 2 teaspoons
  • Garlic - 1 clove
  • Black Pomegranate Molasses - 1 piece
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Wash the carrots, peel, and cut into strips.

Step 2

Peel the onion, wash it, slice one onion into half rings, and chop the other onion.

Step 3

Wash the parsley and cilantro, chop finely, leaving a few leaves for garnish.

Step 4

Boil the egg in advance, then peel and chop it.

Step 5

Wash the pomegranate and extract the seeds.

Step 6

Peel the garlic, wash it, and chop it.

Step 7

Wash the daikon, peel it, and cut it into thin strips.

Step 8

Rinse the meat and pass it through a meat grinder with the remaining onion.

Step 9

Add salt, pepper, and garlic to the minced meat.

Step 10

Mix the minced meat. Form small patties from it.

Step 11

Place a filling of chopped egg and minced parsley on each patty.

Step 12

Pinch the edges of the patties. Place them in a pot and fry in clarified butter on both sides.

In lamb fat, fry the chopped onion and carrots, then add to the pot with the meat patties.

Pour in 800 ml of water, bring to a boil, and add the pre-washed buckwheat groats, cooking on low heat until done.

Then carefully remove the meat patties, and let the porridge sit covered for 30 minutes.

Drizzle the sliced onion with vinegar and let it sit for 10 minutes.

Mix the daikon with part of the onion, dress with a mixture of vinegar and vegetable oil, place in a bowl, and sprinkle with some pomegranate seeds.

Step 18

Serve the finished porridge in a mound on a large plate, sprinkle with herbs, and place the meat patties on top.

Step 19

Garnish with cilantro and parsley leaves.

Step 20

Arrange the onion rings around the edges of the plate and decorate with the remaining pomegranate seeds.
