Ingredients
- Chopped almonds - 1.4 oz
- Bulgur - 3.5 oz
- Cucumbers - 1 piece
- Red Grape Juice - 2.1 oz
- Red Currant - 3.5 oz
- Olive Oil - 3 spoons
- Champagne Vinegar - 2 spoons
- Mint Leaves - to taste
Step by Step guide
Step 1
Toast the almond petals in a dry skillet until golden brown, or roast in a preheated oven at 356°F for 5–8 minutes.
Step 2
Cook the bulgur according to the package instructions.
Step 3
Cut the grapes in half. Shred the red cabbage. Remove the seeds from the cucumber and chop it finely.
Step 4
Mix the olive oil and wine vinegar.
Step 5
Cool the bulgur, place it in a bowl, and mix it with the sautéed almonds, cucumber, grapes, and cabbage. Dress with the sauce, season with salt, and toss well.
Step 6
Tear the mint leaves by hand, add them to the salad, toss, and serve.
