Ingredients
- Parsley - to taste
- Beef - 35.3 oz
- Turnips - 2 pieces
- Onion - 1 piece
- Red Grape Juice - 1 qt
- Green peppercorns - to taste
- Bay leaf - to taste
- Thyme - to taste
- Pickled Chanterelles - 7.1 oz
- Vegetable Oil - to taste
- Wheat Flour - to taste
- Bacon - 7.1 oz
Step by Step guide
Step 1
Cut the beef into pieces the size of a matchbox.
Step 2
For the marinade: peel and slice the carrots into rounds; dice the onion. Pour in the red wine. Add salt, black peppercorns, thyme, and bay leaf.
Step 3
Leave the meat in the marinade for 6 hours in the refrigerator.
Step 4
Remove the meat from the marinade. Pat the pieces of meat dry with paper towels.
Step 5
Sear the meat in vegetable oil. Add flour to the pan.
Step 6
Pour the strained marinade (without the carrots and onion) over the browned pieces, add garlic. The meat simmers over medium heat for 3 hours.
Step 7
In the same pan, fry the bacon and add it to the pot with the meat.
Step 8
In the fat from the bacon, sauté the drained carrots and onion. Add the mushrooms. Sauté everything together.
Step 9
When the meat is ready, add the sautéed vegetables, mushrooms, and parsley to the pot.
