- Butter - 2.5 oz
- Wheat Flour - 1 tablespoon
- Red Grape Juice - ¾ l
- Veal Tenderloin - 1½ kg
- Garlic - 4 cloves
- Campbell's Beef Broth - 17 fl oz
- Herbes de Provence - to taste
- Cognac - 1 tablespoon
- Semi-Smoked Sausage - 5.3 oz
- Shallot - 7.1 oz
- Salt - to taste
- Fresh Mushrooms - 10.6 oz
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
In an ovenproof dish, heat 50 grams of butter and sauté the coarsely chopped meat. Dust with flour and, stirring well, brown it. Pour in the wine and bring it to a boil.
Step 3
Add the broth and bouquet garni (herbs).
Step 4
Cover with a lid, place in the oven, and simmer for at least 2 hours.
Step 5
Sauté the bacon cubes with the shallots and mushrooms in the remaining oil, and add to the meat 10 minutes before cooking is finished.
Step 6
Before serving, pour in the brandy and serve.
