Description
You can manage with dried herbs. Some people strain the marinade, believing that the herbs and vegetables have already given all their flavor to the wine and meat, thus 'contaminating' the sauce. Others strain it, sauté the vegetables separately, and add them to the sauce, while some 'flambé' the marinade to eliminate the alcohol. A bouquet garni is simply a bundle of herbs tied together to impart its aroma to the dish, and then can be easily removed. In this case, it includes bay leaf, parsley, thyme, and sage. You can use many more pearl (small) onions! The main thing is to find them :)
Ingredients
- Beef - 1 piece
- Bacon - 5.3 oz
- Garlic - 2 cloves
- Bouquet Garni - 1 bunch
- Red Grape Juice - 25 fl oz
- Fresh Mushrooms - 7.1 oz
- Onion - 2 heads
- Passata Tomato Sauce - 1 tablespoon
- Carrot - 1 piece
- Pickled pearl onions - 5 pieces
- Butter - 1.8 oz
- Ground Black Pepper - to taste
- Bay leaf - 1 piece
Step by Step guide
Step 1
Remove the bacon. Add the small onions to the skillet - they will absorb the fat from the bacon.
Step 2
Add herbs (sage, thyme, parsley), two large chopped onions, chopped carrot, garlic, and crushed black peppercorns to the meat. Pour in the red wine.
Step 3
Cover and leave in the refrigerator overnight.
Step 4
Remove the meat, set the marinade aside for now - we will need it soon. Pat the meat pieces dry with a paper towel.
Step 5
Sear the meat until browned on each side.
Step 6
Now it's time for the marinade. I heated the strained marinade and simultaneously sautéed some of the vegetables from it.
Step 7
Pour the heated marinade over the meat, add the sautéed vegetables and the bouquet garni.
Step 8
Next, make a roux by melting 4 tablespoons of butter and mixing in 4 tablespoons of flour.
Step 9
Add the roux to the pot, stir well, and let it simmer on low heat for 2 hours.
Step 10
Prepare the filling. Cut the bacon into small pieces. Fry it longer on low heat.
Step 11
Remove the bacon. Add the small onions to the skillet - they will absorb the fat from the bacon.
Step 12
Once the onions are browned, remove them and add the chopped mushrooms to the skillet for just a couple of minutes.
Step 13
Add this filling and a tablespoon of tomato paste to the sauce with the meat that has been simmering for 2 hours. Stir, add salt and pepper to taste, and simmer for another 30 minutes.
