Butter Prawns

Ingredients

  • King Prawns - 2 lbs
  • Corn Flour for Polenta - 1.8 oz
  • Vegetable Oil - 8 fl oz
  • Butter - 3.5 oz
  • 10% cream - 3.5 oz
  • Sugar - 3 teaspoons
  • Curry - 6 pieces
  • Mild Chili Spice - 1 piece
  • Salt - to taste
  • Ground Black Pepper - 1 teaspoon
  • Ground Cinnamon - a pinch
  • Citrus Zest Mix - 1 piece

Step by Step guide

Step 1

Peel the prawns, leaving only the tail, make a cut along the back of each prawn and remove the intestine. Mix the flour with salt and pepper, coat the prawns with this mixture and mix well until the coating sticks to the prawns (you can add a little vegetable oil for better adhesion). Pour vegetable oil into a deep frying pan or wok, heat well over high heat, add a couple of curry leaves, and fry the prawns until golden. Transfer the prawns to a separate dish.

Step 2

Melt the butter in the pan over low heat, add the curry leaves, finely chopped chili pepper, sugar, salt, pepper, cinnamon, and grated lemon zest. Once the sugar dissolves, add the cream. The sauce should be thick like sour cream (if it is too runny, add a little corn flour while stirring constantly).

Step 3

Add the prawns to the sauce, mix well, remove from heat, and transfer to a shallow dish so that the sauce does not drip off the prawns (although, if the sauce is right, it shouldn't drip). The finished prawns can be drizzled with a little lemon juice.
