Description

Instead of red cabbage, you can use radicchio.

Ingredients

  • Green Papaya - ½ piece
  • Red Currant - ½ piece
  • Fresh basil leaves - 2.5 oz
  • Unsalted peanuts, shelled - 1.4 oz
  • Lime - 1 piece
  • Dijon Mustard - 1 teaspoon
  • Grapefruits - 7.1 oz
  • Salt - to taste
  • Vegetable Oil - 0 fl oz

Step by Step guide

Step 1

Shred the cabbage and chop the spinach. Mix everything and sprinkle with salt (preferably a pinch of coarse kosher salt), then place in the refrigerator for half an hour to an hour.

Step 2

Cut the grapes in half and add them to the cabbage along with the peanuts.

Step 3

In a bowl, whisk together the oil, juice of one lime, and mustard until smooth. Dress the salad and mix well. Do not add salt.
