Cabbage Rolls with Beef, Pork, Green Onions, and Chili in Japanese Style
Ingredients
- Salt - to taste
- Napa Cabbage - ½ head
- Ground Black Pepper - to taste
- Pork Mince - 1.8 oz
- Onion - 1 head
- Veal Mince - 1.8 oz
- Scallions - 4 stalks
- Ground ancho chili pepper - 1 piece
- Rice - 1.1 oz
- Mirin - 1 tablespoon
- Dashi powder - 20 fl oz
- Soy Sauce - 1 tablespoon
- Sake - 1 tablespoon
Step by Step guide
Step 1
Cook the rice in boiling water until soft. Drain.
Step 2
Bring lightly salted water to a boil in a pot and add 8 large leaves of Napa cabbage. Boil for 3 minutes, then place on a paper towel to cool. Trim the thick parts from the leaves.
Step 3
In a large bowl, mix the beef and pork mince, finely chopped onion, green onions, and chili. Season with salt and pepper, then add the cooked rice and mix well.
Step 4
Lay 2 cabbage leaves on the table, slightly overlapping one another, and place a quarter of the filling in the center of one. Fold it like an envelope and secure with a toothpick. Make 3 more envelopes in the same way.
Step 5
Bring mirin, dashi, soy sauce, sake, and a pinch of salt to a boil and let it simmer. Then add the cabbage envelopes, cover with a lid, and simmer for 40 minutes.
Step 6
Transfer the envelopes to 2 rectangular plates, remove the toothpicks, and cut each in half. Drizzle with broth on top.
