Cabbage Salad with Potatoes
Ingredients
- White Cabbage - 4 lbs
- New Potatoes - 4 pieces
- Salt - to taste
- Lemon - 1 piece
- Chicken Egg - 2 pieces
- Safflower Oil - 25 fl oz
Step by Step guide
Step 1
Boil the potatoes and cut each potato into 2–4 pieces.
Step 2
Remove the outer leaves of the cabbage, divide the head into 4 parts, remove the core, and then cut the leaves into strips about 2 cm wide. Rinse well.
Step 3
Bring a large pot of salted water to a boil, add the cabbage, submerge it with a spoon, let the water come to a boil again, reduce the heat, cover the pot, and cook for 30 minutes until the cabbage is soft.
Step 4
Meanwhile, mix the egg yolks with the juice of 1 lemon (or vinegar) and salt, then, while continuing to whisk, slowly pour in the oil. All components should be at room temperature for the mayonnaise to be thick and smooth.
Step 5
Drain the water from the cabbage. If you plan to serve it hot, place it on a warmed dish, add the potatoes, drizzle with mayonnaise, and serve immediately. If you want a cold dish, let the cabbage cool, then add tomato slices and drizzle with mayonnaise.
